Easy Courgette Cake Recipe : What to do with courgette glut


If you grow courgettes at home or on your allotment like we do, I expect this year you have had lots left over, it has been a great year for growing courgettes. Here is an idea on how to use up your courgette glut.

Super Simple Courgette Cake Recipe

Ingredients
Fry light / spray oil
2 eggs
125ml vegetable oil
85g brown sugar
350g grated courgette
1tsp vanilla essence
300g plain flour
2tsp cinnamon
1tsp nutmeg
1tsp baking powder
140g sultanas

Equipment
Loaf tin
Greaseproof paper
Mixer with whisk attachment or Large mixing bowl & spoon

Method
1. Spray loaf tin & line with greaseproof paper. Pre-heat oven to 180c/160c fan
2. Add eggs, oil, sugar, grated courgette & vanilla essence to mixing bowl & mix.
3. Now add the rest of the ingredients & mix again.
4. Pour mixture into loaf tin and place into the oven for 1hr. Check with skewer by pricking through the middle, if comes out clean it is cooked. If not return to oven for a further 5min then check again (repeat as needed)
Once removed from oven leave to cool before serving.

Serving suggestions
Serve with natural yougurt & fresh fruit for a really yummy desert that all the family will enjoy.

We don't grow courgettes because none of us like them... But I've had courgette cake before and you can't taste courgette, it just makes a beautifully moist cake, doesn't it? AND my neighbour always has a glut so I'm going to print out your recipe and give it to him! x
