Sunday baking experiment : Healthy? Softbake Bars


Dispite the how the photo looks, I'm not in Costa in fact I can't remember the last time I had a Costa but I do love my little Costa mug!

I have been experimenting recently with (hopefully) healthier baking options and created this yummy soft bake bar using ingredients I found in my larder.

100g Hemp seed hearts
80g peanut flour
50g self raising flour
50g Soft brown Sugar
50ml coconut milk
2tbp coconut oil
3 eggs (175g in weight)
1tsp baking powder
50g sultanas

I combined all the dry ingredients in a bowl first.
Then i put them into the electric mixer bowl, added all the other ingredients & turned the mixer on until it looked well mixed and smooth.
I sprayed a square tin with fry light then poured in the mixture.
I baked in the over at 190c for 25 mins

Once cool I carefully took the soft bake out of the tin & cut it into bar shapes.

I really wasn't sure what to expect but they taste really yummy! I'm now going to attempt working out the calories & fat content using online calculators to find out if they really are a healthier alternative to normal cakes!! Haha
