If you have a courgette glut and are looking for a tasty way to use them I can highly recommend roasting them with a selection of other vegetables. This is something we look forward to every year. Roasted veg are delicious served hot or even cold with salad.
You can roast many different types of vegetables together with your courgette (or Zucchini if that's what you know them as) we like to use onions, peppers, tomatoes, mushrooms and sometimes garlic. We also add a little olive oil, seasoning and a good sprinkle of homegrown mixed dried herbs.
If you are growing round courgettes, like the ones in the photo above, this is a great way to use them up as they are particularly good roasted. The traditional long style courgettes are good roasted too but I find they are really useful for dehydrating, whereas the round ones are not so good for dehydrating.
If you haven't grown courgettes before i highly recommend giving them a go. They are one of the easiest vegetables to grow in the UK. They are usually prolific croppers.
